I am so excited to finally share The Sweetest Plantain with the world 🙂
In future posts you will find some of my favorite recipes and discover new ones with me! I must aware you, breakfast is my fave meal. And sweet potatoes and plantains are staples in my kitchen. I am not vegan or vegetarian, just love all whole & fresh foods.
If you are not familiar with plantains, it is this Hispanic obsession of mine – and I guess every other Hispanic! You could prepare them in sooo many ways, you could eat them when they are green for salty flavor or when are ripe for the most AMAZE sweet flavor. *sweet tooth right here*
I am not a plantain expert by any means, but love to keep experimenting new recipes with it and add my twist to existing ones!
So with no more further ado, let me introduce you to The Sweetest Plantain’s first recipe…Bolon de Verde!
I must aware you… you feel FULL after eating Bolon de Verde, but it is packed with protein. We usually make them for breakfast and play with different “Bolon” sizes. Feel welcome to sub cheese for vegan option!

Bolon de Verde
Welcome to The Sweetest Plantain! The first recipe I want to introduce to you all is with Plantain... hence as a tribute to the name. Bolon de Verde will keep you full and fueled, enjoy it with a hot cup of coffee!
- 2 plantains make sure they are green
- 1 cup mozzarella cheese small cubes
- 2 tsp coconut oil
Add coconut oil to pan in med-high. In the meantime, cut the ends and slide knife's tip lengthwise along the plantain. Remove skin.
Cut plantain in slices, about 1 inch. Add to hot plan and cook each side until golden brown, about 2 minutes on each side.
Add cooked plantain's slices into a large bowl and mash with potato masher. Add cheese and mix.
Form balls with the plantain & cheese mix, add to hot pan. Cook for about 4 minutes, until golden brown.
